OK, so i’m still getting the organic fruits and veggies every other week.

The stuff is decent, it’s just a matter of me actually eating it when i could be eating, well cheese. Or chocolate.

But i’ve come up with one solution for some of these veggies. Quiche!!! (i think i’m going through a retro ’80s phase these days…) Right now, there’s a leek and spinach quiche (with a wheat flour-swiss cheese crust) in the oven. The leeks are very tasty, though it’s kinda complicated how you have to clean and cook them.

Here’s how: Mix 1 cup whole wheat flour with 2/3 cup grated cheese and 6 tablespoons of healthy oil type stuff (or butter). Press into a pie plate, bake at 400 degrees for 10 minutes.

Clean (look it up!) and slice a leek or two, saute in butter for 20 minutes or so until soft. Toss it in the crust. Top with some leaves of fresh spinach (a cup or so?). Grate some gruyere cheese (like a cup) over the top. Whisk three or four eggs, then add some cream (a cup or so?). Pour over the stuff. Bake at 350 for 30 minutes or so.
